I’ve decided Thursdays are for foodies here on kristenhasfaces.com! What does that mean exactly? I’ll be featuring some of my favorite healthy recipes, or maybe reporting back on a new one I tried. Some weeks I’ll share a recipe, sometimes I’ll just give ideas to make cooking healthfully easier, but I’ll always try to keep it fun. So without further ado here’s my first foodie post with a really great recipe I’m sure you’ll all love.
I’ve mentioned several times I like to prepare in advance as much as I possibly can. This recipe totally embodies that and will last you quite a while in your fridge. It couldn’t be simpler and it tastes great. I learned about it from my Weight Watchers meeting down the shore so I finally have something positive to say about this meeting location! One of the other members said she’s used it and really loved it so I thought I’d give it a shot.
It’s called a 3-2-1 cake and you’ll see why in just a second. Here’s what you’ll need to make this dessert:
1 Box Angel Food Cake Mix
1 Box Cake Mix (any variety)
2 Tablespoons water
1 Coffee Mug
Cooking Spray
Here’s what to do. Get yourself a big Ziploc bag and dump the angel food cake mix and the cake mix in, seal it up, and mix them together. I used lemon because I love anything lemon and I had it on hand, but you can use any kind of cake mix you like. Addicted to chocolate? Go for that. Maybe you love banana? Why not use that? When you have your mix combined, you can store the bag in your fridge for a while and just pull it out when you want to have this sweet treat.
As for how to put the cakes together; it couldn’t be easier. Grab your baggie of mix, a Tablespoon, and a coffee mug and you’re on your way. Spray the mug with a bit of cooking spray then put three Tablespoons of the mix inside. Add 2 Tablespoons of water and mix well. Stick it in the microwave for one minute on high to make an awesome little cake for two points plus! Get it? Three tablespoons mix, two tablespoons water, and one minute in the microwave. 3-2-1 Cake!
You can experiment with your cake and make them anyway you’d like? How about some fruit to top it? Maybe a little whipped cream? Just count the points for whatever you put on top and enjoy a little dessert! Just because we are being healthy doesn’t mean we have to deprive ourselves of a sweet treat.
This little cake will only cost you 2 points plus! How can that be beat?
